1/2 C butter, softened

8 basil leaves, coarsely chopped

2 garlic cloves, coarsely chopped

2 T orange liqueur

1/8 teaspoon salt

1/8 teaspoon pepper

4 Florida lobster tails

Process butter, basil, garlic, liqueur, salt & pepper in a food processor until smooth. Cover.

Cut lobster tails in half lengthwise. Spread half of butter mixture over meat, and grill 5 min. per side or until lobster is opaque and completely cooked through.  Serve with melted butter on the side. (4 servings)

Florida lobsters, also called spiny, Caribbean, or rock lobsters, live in warm tropical and subtropical waters.  This species lacks the large pinching claws prized in traditional Maine or American lobsters.
