Frittatas are so easy, and you can add what you have on hand to enhance the flavor and add veggies or cheeses of your choice, there are endless variations and all are good. This is Keto friendly, for anyone watching their carbs. To make this one even easier, I used one of my favorite products from Trader Joe’s, “Fire Roasted Bell Peppers & Onions” from their freezer section. Here’s how I made this one:
- 6 large eggs
- 1/3 cup half and half
- 1/2 tsp. salt, adjust to taste
- 1/4 tsp. pepper
- 1 cup grated cheddar cheese
- 1/2 cup mixture red & green bell peppers and onions (frozen from Trader Joe’s)
- 1/4 cup left over broccoli (Or vegetable of choice)
- 1/2 cup grated or cubed mozzarella cheese
- 1 tablespoon butter
- Optional: 1 tsp fresh herbs for garnish
Preheat oven to 400F. Whisk eggs, half and half, and salt & pepper until you get a smooth texture. Set aside.
Add butter to small cast iron pan (or other oven proof pan) and melt, coat the sides. Spread bell pepper and onion mix on the bottom and sauté a few minutes on med. burner. (Add any other vegetables you have on hand or like, in this case, I added left over broccoli, you can add chopped asparagus, halved cherry tomatoes, etc., there are endless variations including cooked diced bacon).
Pour egg mixture over the vegetables in the pan. Sprinkle the cheeses on top and distribute the cheeses around the egg mixture. Bake for 15 to 17 minutes until the edges are set and all liquid is solid.
Let cool for 5-10 minutes and serve. Can be refrigerated and reheated in the microwave or oven.
