This is a really healthy salad with so much flavor and so easy to put together. It’s mayonnaise free and low carb so you get it all in this one dish! It’s great for a large party or potluck!

Ingredients:

SALAD INGREDIENTS:

  • 1/2 large red bell pepper, coarsely chopped
  • 1/2 red onion, finely chopped
  • 1 English cucumber, large dice
  • 3- 15 oz. albacore tuna fish, drained
  • 2 cloves garlic, minced
  • 1- 16 oz. can chickpeas (garbanzo beans), drained
  • 1/2 cup black olives, cut in half
  • 2 Haas avocados, large dice
  • 1 pkg. Feta cheese, broken up
  • 1-12 oz. bottle or can artichokes, drained
  • 1/2 cup fresh parsley, chopped (for garnish)
  • salt and pepper to taste

LEMON VINAIGRETTE DRESSING:

  • 1/3 cup fresh lemon juice (about 1 & 1/2 lemons)
  • 1 small garlic clove, grated
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon sea salt, more to taste
  • Freshly ground black pepper
  • 1/2 teaspoon honey
  • 1/3 cup extra virgin olive oil
  • 1/2 teaspoon fresh or dried thyme

Directions:

Add red bell pepper, onion, cucumber, tuna, garlic, chickpeas, olives, avocados, artichokes, and Feta cheese to a large bowl. Mix until well combined. Set aside and make dressing

In a glass jar, add the lemon juice, garlic, Dijon mustard, salt, pepper, honey, olive oil, and thyme. combine everything in the jar with a tight-fitting lid and shake vigorously to combine.
If your dressing is too tangy, add more olive oil, to taste. Taste and if needed, add more salt.

Drizzle dressing over the salad and toss to combine. Chill until ready to serve. Before serving, sprinkle chopped parsley on top. Serves 10-12
