This is a delicious fresh salad that is great as a side dish for any occasion, from a back yard party to a fancy dinner party. Wholesome and healthy ingredients will also be a bonus!

Ingredients:

  • 4 cups water
  • 1.5 cups orzo pasta
  • 1/2 cup feta cheese
  • 1/2 red bell pepper, chopped
  • 1/2 yellow bell pepper, chopped
  • 1 cup cherry tomatoes, cut in half
  • 4 green onions, sliced thinly
  • 1 15 oz. can chick peas (also know as garbanzo beans, drained and rinsed
  • 1/3 cup good olive oil
  • 1 large lemon
  • zest of 1 lemon
  • 2 tsp. honey
  • salt & pepper to taste

Directions:

In a medium sauce pan, bring the water to a boil, add several pinches of salt to the water. Add the orzo pasta and cook until al dente, about 10 minutes. Drain and rinse with cool water.

As the water is boiling and the orzo is cooking, you can start with the vegetable prep. Chop up the red and yellow peppers, tomatoes, and green onions. Set aside.

Rinse and drain the chick peas. Combine the vegetables and peas in a large bowl.

Make the dressing by combining olive oil and honey. Add the zest of one lemon, then the juice. Add salt and pepper to taste and shake or whisk well.

Drizzle the dressing over the pasta salad and combined. Serve chilled or at room temperature.
