HOT CRAB DIP
2 C grated pepper jack cheese
1/4 C softened cream cheese
1/3 C sour cream
1/2 C Durkee’s mayonnaise
1/2 C green onions, minced
2 T chopped fresh parsley
1 T fresh lemon juice
Zest of 1/2 lemon
1/4 tsp ground pepper
1 large container lump crabmeat
1/4 C freshly grated Parmesan cheese
Preheat oven to 350 degrees. In a large bowl, combine pepper jack cheese, cream cheese, sour cream, mayo, bell pepper, green onion, parsley, lemon juice, lemon zest, salt, and ground pepper. Gently fold crabmeat into cheese mixture.
Spoon mixture into a 1 1/2 quart baking dish. Sprinkle Parmesan cheese on top of crab mixture.
Bake until bubbly, 30 to 35 minutes. Serve hot with a variety of crackers.
