This is a variation of a recipe from my friend Mary, It goes great with Steakhouse Filet Mignon and Blue-Cheese sauce!

Add the walnuts at the end.
Sprinkle with cinnamon-sugar for presentation.

4 to 6 small to medium size yams, washed

1/2 C salted butter (1 stick), softened

2 T maple syrup

1 tsp. peeled, grated fresh ginger

1/4 tsp.  ground cardamon

1/4 tsp. black pepper

1/4 C chopped walnuts

cinnamon-sugar for dusting

Pierce yams with a fork.  Set yams directly on oven rack and bake for 1 hour at 400 degrees.

Place softened butter, maple syrup, graded ginger, cardamom, and pepper in a mixing bowl and blend well with a fork. Add walnuts and mix in.    Place 1 to 2 T of mixture into tiny condiment bowls (I used stainless steel ones),  sprinkle with cinnamon sugar and serve along side yam on plate so that everyone can add their own.

Makes 4 to 6 depending on number of guest.
