Now for the left over turkey! Here is a great, healthy treat for the entire family, great for lunch. This is really good, even without the pita, just serve on top of greens! You can also make this with cooked chicken instead of turkey, just substitute chicken and follow the same recipe:
(You can use croissants instead of pita bread too!)
1/2 C mayonnaise
2 T lemon juice
1/2 tsp. pepper
4 cups cubed, cut-up cooked turkey meat
2 celery stalks, thinly sliced
1 apple, peeled and chopped
1/2 C finely chopped fresh spinach
1/3 C dried cranberries
1/3 C chopped pecans
8 onion pita breads, halved
16 romaine leaves
8 slices red onion, separated into rings (optional)
Top with Alfalfa sprouts, sparingly (optional)
In a small bowl, combine the yogurt, mayonnaise, lemon juice and pepper. In a large bowl, combine the turkey, celery, apple, spinach, cranberries and pecans. Add yogurt mixture and stir to coat. Cover and refrigerate until chilled. Line pita halves with lettuce and onions, fill each with 1/2 cup turkey mixture.
Can make this with Chicken too! Serves 8
