If you want an extraordinary side dish, look no further, this is both delicious and sophisticated!

Ingredients:
- 4 lbs. Yukon gold potatoes, cut into bite size pieces
- 2 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 1 tsp fresh rosemary, chopped
- 1 tsp fresh thyme leaves
- 3 tbsp Dijon mustard
- 2 tbsp honey
- 1 tbsp apple cider vinegar
- 1/2 cup olive oil
- salt and pepper to taste
Directions:
Preheat the oven to 425 degrees.
In a large bowl, combine the cut potatoes, minced garlic, parsley, rosemary, thyme, salt and pepper.
In a separate small bowl, whisk together the Dijon mustard, honey, apple cider vinegar and olive oil until well combined.
Pour the dressing over the potatoes and toss until they are evenly coated.
Spread the potatoes in a singe layer on a baking sheet. Roast in the preheated oven for about 30-40 minutes, or until golden and tender, stirring halfway through.
Serve hot from the oven!
