INGREDIENTS:

  • 1 package yellow cake mix (I like Dolly Parton)
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans

DIRECTIONS:

Preheat the oven to 350 degrees. Place 12-14 cupcake wrappers in a cupcake pan or use stand alone cupcake wrappers. In a large mixing bowl, combine the cake mix, buttermilk, vegetable oil, eggs, and vanilla extract. Beat with an electric mixer on medium speed for 2 minutes. Stir in the shredded coconut and chopped pecans by hand. Divide the batter between the cupcake wrappers. Bake in pre-heated oven approximately 25 minutes. Allow to cool on a wire rack before frosting.

(You can use the same recipe for 3-8 inch pans or 2-9 inch pans, make sure to grease and flour pans)
