I’ve been asked for my recipe for Brussels sprouts and here is my favorite, not your mother’s Brussels sprouts. They have come a long way and are now grown with better flavor I think. Make sure you get the smallest ones you can find, they are the most tender. 

INGREDIENTS:

  • 1/2 to 3/4 pound bacon, fried crisp, sliced into small pieces
  • 2 pounds Brussels sprouts, cut in half lenght-wise
  • 1/2 cup crumbled blue cheese
  • 1/2 cup chopped walnuts, lightly toasted
  • 1/3 cup craisins
  • Salt & pepper to taste
  • Balsamic glaze to finish

DIRECTIONS:

Preheat the oven to 400 degrees. Fry the bacon in a large frying pan over medium-heat until nice and crispy and brown. Set the bacon aside and use the same frying pan with the bacon grease to fry the cut Brussels sprouts. Fry for about 10 minutes, stirring every minute or so. They should be lightly browned.

Salt the Brussels sprouts generously. Transfer the Brussels sprouts pan to the oven and bake at 400 degrees for about 20 minutes or until browned and tender. 

Remove the pan from the oven, stir and season to taste with additional salt & pepper. Place the Brussels sprouts into a serving bowl and toss in the cooked crisp small pieces of bacon. Sprinkle with the crumbled blue cheese, sprinkle the lightly toasted chopped walnuts and add the craisins. Toss to distribute evenly. Top with drizzle of good balsamic glaze. 

(I like to add more balsamic glaze when serving!)
