
Strawberry Cupcakes Using Box Mix
Makes about 24 cupcakes
Ingredients
1 box white or vanilla cake mix (15.25 oz)
1 cup all-purpose flour
1 cup granulated sugar
½ teaspoon salt
1 cup sour cream or plain Greek yogurt
1 cup milk (whole or 2%)
½ cup unsalted butter, melted (or ½ cup vegetable oil)
3 large eggs
1 tablespoon vanilla extract
¾ cup fresh strawberries, finely chopped
Instructions
1. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
2. Mix dry ingredients: In a large bowl, whisk together the cake mix, flour, sugar, and salt.
3. Add wet ingredients: Stir in sour cream, milk, melted butter, eggs, and vanilla. Mix until smooth.
4. Fold in strawberries: Gently stir in the finely chopped fresh strawberries.
5. Fill cupcake liners: Fill each liner about 1/2 full.
6. Bake for 22 minutes, or until a toothpick inserted in the center comes out clean.
7. Cool completely before frosting.
