This is a simple yet delicious dish that could be served as a weekday meal but is good enough for company! The extra bonus of a rich, creamy sauce takes it over the top!

INGREDIENTS:

  • 2 boneless, skinless chicken breast
  • 4 boneless, skinless chicken thighs
  • 1 sleeve Ritz crackers, crushed
  • 1/4 cup milk
  • 1 large egg
  • 2 cups shredded cheddar cheese
  • salt to taste
  • garlic pepper to taste

Sauce:

  • 1 can (10 oz.) cream of chicken soup
  • 1/4 cup heavy cream
  • 2 tablespoon sour cream
  • 2 tablespoon butter

DIRECTION:

Preheat oven to 400 degrees. Line a large baking sheet with aluminum foil and spray with cooking spray. Whisk together the egg and 1/4 cup milk in a shallow dish. Place the crushed Ritz crackers in another shallow dish and the cheddar cheese in a third.

Season the chicken with salt and garlic pepper on both sides. Dip each chicken piece into the egg and milk mixture, then press the shredded cheese onto the chicken, and finally coat with the crushed Ritz crackers.

Place the coated chicken on the prepared baking pan and bake for 30 to 35 minutes or until fully cooked.

While the chicken is baking, prepare the sauce by melting the butter in a small saucepan over medium heat. Add the cream of chicken soup, sour cream, and 1/4 cup heavy cream. Whisk until well combined and heated through.

Serve the chicken hot with the sauce poured over the top.
