3 C COOKED white rice*
1/4 C olive oil
2 1/2 T red wine vinegar
3 Roma tomatoes,chopped
1/2 C pitted green olives, chopped
1/4 C capers, rinsed and drained
1/4 C minced red onion
1/4 C chopped fresh basil
*Make rice according to directions on box. Cool rice. In a bowl, mix rice with olive oil and vinegar, add tomatoes, olives, capers, onion, basil, salt & pepper to taste. Gently mix. 4-6 serv.
