This is similar to Panera Bread Broccoli Cheese Soup and is thick and rich! It’s delicious and easy to make! You can double the recipe for a crowd!



INGREDIENTS:
- 1 Tablespoon unsalted butter
- 1/2 white onion, chopped
- 1/4 cup unsalted butter, melted
- 1/4 cup all purpose flour
- 3 cups half and half
- 3 cups good chicken stock
- 2 cups fresh broccoli florets, loosely chopped
- 1 cup carrots, peeled and shredded (I used my food processor)
- 1/2 teaspoon nutmeg
- 3 cups sharp cheddar cheese, grated
- salt and pepper to taste
DIRECTIONS:
Saute the onion in 1 tablespoon melted butter and set aside. In a large pot whisk together the melted butter and flour over edium heat for 3-4 minutes.
Slowly whisk in the half and half and chicken stock. Let it simmer for about 20 minutes.
Add the broccoli, carrots, and onions. Let them simmer on medium low for about 25 minutes until the broccoli and carrots are tender.
Add nutmeg, salt, pepper, and sharp cheddar cheese. Let the cheese melt and then serve. Serves 8
